Homemade Chocolate Chip Cookies


Chocolate chip cookies



 1 1/4 cup packed brown sugarchoc chip cookies




3/4 cup butter flavor crisco

2 tablespoons milk

1 tablespoon vanilla

1 large egg

1 3/4 cups all-purpose flour

1 teaspoon salt

3/4 teaspoon baking soda

1  (11 ounce) bag Ghirardelli milk chocolate chips

Preheat oven 375*

Mix brown sugar, crisco, vanilla and milk until light and fluffy with electric mixer. 

Beat in egg.

Combine flour, salt and baking soda in seperate bowl.

Mix into creamed mixture until just blended.

Stir in chips by hand. 

Drop by rounded tablespoon on ungreased cookie sheet about 2 inches apart.

Bake 8-10 minutes for chewy cookies or 11- 13 minutes for crisp cookies.

* you can add 3/4 cup of nuts if you like.

Lemon Drop Cookies



Lemon Drop Cookies

 1 pkg  Lemon cake mix ( i use Pillsbury)

1/3 cup Oillemon drop cookies

2 eggs

1/4 cup sugar

1 cup powdered sugar

2 - 3 tbsp lemon juice

1. Preheat oven to 375F. In a large bowl, combine cake mix, oil, and eggs; stir with spoon until combined into a moist dough. Shape dough into 1-inich balls and place 2 inches apart on cookie sheet.

2. Bake at 375F for 5 to 10 mintues or until edges are golden brown. Cool 1 mintue and remove from cookie sheet.

 

 3. In a small bowl, combine powdered suger and 2 tsp. lemon juice (add more if needed) until smooth and  drizzle over cookies. You can also dust the cookies with the powder sugar. Enjoy

 Chocolate-Chip-Cherry-Cobbler




 

4 cans (17 ounces) pitted, tart cherries, drained

1/2 cup sugar

1 1/2 tablespoon all purpose flour

1 cup semi sweet mini chocolate chips

 

Topping

 

1/2 cup all purpose flour

1/2 cup sugar

1/4 cup packed brown sugar

1/2 stick softened butter

 

 

Preheat oven 375 degrees

Mix cherries, sugar and flour. Spread evenly into a 11 x 7 baking dish.

Sprinkle chocolate mini chips over top.

 

For topping mix together the flour, sugars and a pinch of salt.

Cut in butter until mixture is crumbly.

Sprinkle topping over the cherry filling.

 

Bake cobbler until filling bubbles and topping is golden brown.

About 40 to 45 minutes.

Peach Salsa

 2 cups diced fresh peachespeach salsa




3/4 cup chopped red bell peppers

1/4 cup chopped green onion

2 jalapeno peppers, seeded and finely chopped

2 tablespoons honey

2 tablespoons lime juice

1/4 cup chopped fresh cilantro

Combine all ingrediants, cover and chill one hour.

Great served on pork, chicken or fish

Rhubarb Walnut Bread



1 cup milk




1 tablespoon lemon juicerhubarb_bread

1 teaspoon vanilla

1-1/2 cup brown sugar

2/3 cups vegetable oil

1 egg

2-1/2 cups all purpose flour

1 teaspoon salt

1 teaspoon baking soda

1-1/2 cups chopped rhubarb

1/2 cup chopped walnuts

1/4 cup brown sugar

1/2 teaspoon ground cinnamon

1 tablespoon butter, softened

Preheat oven to 325* Lightly grease two 9 x 5 inch loaf pans. In a small bowl stir together milk, lemon juice and vanilla.  Let set 10 minutes.

In a large bowl mix 1-1/2 cups brown sugar, oil and egg. 

Combine flour, salt and baking soda, stir into sugar mixture alternating with milk mixture until well combined. Fold in rhubarb and nuts. Pour into loaf pans.

In a small bowl combine 1/4 cup brown sugar, cinnamon and butter.  Sprinkle over the unbaked batter.

Bake in preheated oven 40 minutes or until toothpick inserted in center comes out clean.

Zucchini Bread

This zucchini bread is moist and flavorful with sour cream, dried cranberries, orange zest, and optional chopped walnuts or pecans.

Ingredients:



  • 3 cups all-purpose flourzuchinni bread

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 2 teaspoons cinnamon

  • 1 teaspoon salt

  • 1 2/3 cups granulated sugar

  • 1/2 cup Canola oil

  • 3 large eggs

  • 2 teaspoons orange extract

  • 2/3 cup sour cream

  • finely grated zest of 1 orange, about 1 tablespoon

  • 2 cups shredded zucchini

  • 1 cup dried cranberries

  • 3/4 cup chopped nuts, optional


Preparation:


Heat oven to 325°. Grease and flour two 8 1/2 x 4 1/2 x 3-inch loaf pans.Combine the flour, baking powder, soda, cinnamon, and salt; set aside.

In a large mixing bowl, beat or whisk together the sugar, oil, eggs, and orange extract.

Stir in the dry ingredients and th sour cream until well blended. Fold in the orange zest, zucchini, cranberries, and optional chopped nuts. Spoon into the two loaf pans, dividing equally.

Bake for 55 to 65 minutes, or until a wooden pick or cake tester comes out clean when inserted in center.
Makes 2 loaves of zucchini bread.

Fresh Tomato Salsa

2c.chopped Roma tomatoes

1 medium (1/2c) red onion,chopped

1/2 chopped green bell pepper

1/2 c. chopped fresh cilantro

2 tbsp. lemon juice

1 tbsp. lime juice

1 large jalepeno pepper seeded and finely chopped

In a medium bowl mix all ingrediants, cover and refrigerate for 1 to 2 hours

Serve with tortilla chips as a dip or its also great on scrambled eggs.

Dolly Parton "Better Day" Tour Kick Off Concert

Dolly Parton "Better Day" Tour Kick Off Concert - Mark your calendar for July 17, 2011. This will be the first time in at least 26 years she’s performed a local show outside Sevier County. The event will be at Thompson Boling Arena in Knoxville, TN.DollyParton1-760102

The event, set for July 17, could raise around $300,000 for the foundation, around the same amount generated when Parton does three concerts at Dollywood. The foundation's Imagination Library, which delivers books to preschoolers around the world, just handed out its 30 millionth book.

According to the foundation, ticket Cost will be $59.50, $49.50 and $39.50. Net proceeds go to the foundation.

Tickets will be available at knoxvilletickets.com.

The concert will showcase Parton's upcoming country CD "Better Day," which Parton says is aimed at uplifting and inspirational songs.

Quick Blackberry Cobbler

With Blackberries filling up on the vines here is a simple and delicious cobbler you are sure to make over and over!


Ingredients



  • 1/2 cup butter

  • 2 cups self-rising flour

  • 2 cups white sugar

  • 2 cups milk

  • 3 1/2 cups blackberries




Directions



  1. Preheat oven to 350 degrees F (175 degrees C). Once oven temperature is reached melt butter in a 9x13 inch baking pan.

  2. In a medium bowl stir together the flour, sugar and milk; batter will be slightly lumpy. Pour mixture on top of melted butter in baking pan. Do not mix butter and mixture together.

  3. Drop blackberries into batter; if more crust is desired add less blackberries. Bake in preheated oven for one hour or until golden brown.

  4. We suggest topping it with a scoop of your favorite vanilla Ice cream while its still warm!

Bacon Quiche

This dish is wonderful for breakfast, lunch or dinner!

Bacon_Quiche_recipePreheat oven to 350 degrees

1 sheet refrigerated pie crust pastry

1/4 c. sliced green onions

1 tbsp. butter

6 eggs

1 1/2 c. heavy whipping cream

1/4 c. unsweetened apple juice

1 lb. bacon, cooked and crumbled

1/8 tsp. salt

1/8 tsp. pepper

2 c. (8oz) shredded swiss cheese

Line 9 in pie plate with pastry; trim & flute the edges and set aside.

In a small skillet Saute green onions in butter until tender.

 In a large bowl, whisk eggs,cream and juice.

Stir in bacon, salt, pepper and green onions.

Pour into pastry, sprinkle with cheese.

for 40-45 minutes or until a knife can be inserted near center and comes out clean.

Let stand for 10 minutes cut and enjoy!

Spiced Crakers

spiced oyster crakersSpiced Crakers are great to serve at any get together!

2 ( 1oz) packets of dry ranch dressing

1 1/4 tsp. cayenne pepper

1 1/2 tsp. crushed red pepper flakes

2 c. canola oil

1 lb oyster crakers

In a large plastic container with a lid, mix dressing mix, cayenne and red pepper flakes. Add the oil and mix well. add the crakers, toss until all are coated. Mix every 20 to 30 minutes until oil is absorbed.

You can adjust the amount of crackers if more oil needs to be absorbed. This is a fun recipe to try different hottness levels. Have fun and you might also try different crakers to change the taste a bit.

Lime Bread

Lime Bread

Lime Bread IcePreheat Oven to 350 Degrees

1 3/4 c.all purpose flour

3/4 c. sugar

2 tsp. baking powder

1/4 tsp. salt

1 egg

1 c. buttermilk

1/4 c. vegetable oil

1 tbsp. lime peel

3 tbsp. lime juice

1 tbsp sugar

Grease bread loaf pan with cooking spray.

Mix flour, baking  powder and salt and set aside

Mix sugar, egg, buttermilk,and oil in mixer until combined.

SLowly add flour mixture and lime peel, and 1 tablesppon of lime jiuce.

There may be lumps, do not over mix.

Pour into prepared pan and bake  for 50 to 60 minutes or until a toothpick inserted into center comes out clean.

Mix remainding 2 tablespoons of lime juice and 1 tablespoon sugar until the sugar dissolves.

Pour over bread while still warm.

Completely cool for 1 hour... Enjoy!

What to do with your July 4th grilled Leftovers

We all have them after our busy fun filled celebration the left over hot dogs, hamburgers, ribs, chicken! So we are going to give you a few ideas to wake those delicious foods back up and turn them into a brand new dishes you will be happy you had leftovers for! 

Hot Dogs- You will need pilsbury crescent rolls, mustard,butter and the leftover hot dogs.Pigs in a Blanket

Roll out the crescent rolls and place the hot dog in them and roll them up and brush with butter bake at 350 until crescent is golden brown approx 10 minutes use the mustard as a dip for a delicious comfort snack.

Hamburgers- You will need taco seasoning, shredded lettuce, diced tomatoes, shredded cheese, sour cream and flour tortillas.

Crumble burger patties and reheat in a skillet, add taco seasoning and small amount of water, fill flour tortillas with all your favorites and enjoy!beef-soft-taco-01

Ribs- You will need bbq sause and burger buns

Shred the meat from the ribs and reheat, add frsh bbq sause and put on buns and eat a wuick and easy bbq pork sandwich!

Chicken- You will need mayonaise, celery, grapes, nuts, and whatever bread you had leftover.526_sonoma_chicken_salad

Cut chicken into 1 inches pieces, add mayonaise 1 cerlery stalk, cut up grapes and nuts mix well spread on Bread and enjoy!

36th Annual July 4th Midnight Parade

US_Army_Float_large_lgFourth of July Midnight Parade, Saluting the valiant men and women of our military services, this 36th annual showcase is the “First July Fourth Parade in the Nation!” Parade starts at the stroke of midnight to begin Independence Day July 3rd.

21st Annual July 4th Patriot Festival

The 21st Annual Patriot Festival at Patriot Park in the heart of Pigeon Forge, Tennessee. Festivities get started at 1:00 p.m. on July 4, 2011. The Patriot Festival is FREE and open to the public. Patriot Park is located on Old Mill Street at traffic light number 7 behind the historic Old Mill. Take advantage of the city parking lot on Teaster Lane with a trolley shuttle going to Patriot Park.Listeners should bring a lawn chair (no umbrellas, please) and prepare to enjoy an outstanding lineup of live musical entertainment.

Musical entertainment will include Restless Heart as the headliner. They will perform from their long list of number one hits including, “When She Cries, “Bluest Eyes in Texas” and “I’ll Still be Loving You.”  Randy Montana, who just got off tour with Taylor Swift will also be performing along with The Roys a bluegrass band and local favorites Jimbo Whaley and Greenbriar. The Return,a Beatles Tribute Band, will also perform along with patriotic music from the Pigeon Forge Community Choir. In addition to the headliner, Restless Heart, a bluegrass brother-sister duo The Roys and Mercury Records artist Randy Montana with his latest hit “1,000 Faces,” have been added to the lineup.
