Berry Springs Lodge Creamy Hot Chocolate

Ingredientshot chocolate


  • 1 (14-ounce) can sweetened condensed milk

  • 1/2 cup unsweetened cocoa

  • 1 1/2 teaspoons vanilla extract

  • 1/8 teaspoon salt

  • 6 1/2 cups hot water

  • Mini Marshmallows (optional)


  • Directions




    In a large saucepan, combine sweetened condensed milk, cocoa, vanilla and salt; mix well. Over medium heat, slowly stir in water; heat through, stirring occasionally. DO NOT BOIL. Top with marshmallows, or whipped topping if desired.

     

    Tip: Chocolate can be stored in the refrigerator up to 5 days. Mix well and reheat before serving

    Ingredients



    • 3 cups all-purpose flour

    • 1/4 cup white sugar

    • 4 teaspoons baking powder

    • 3/4 teaspoon cream of tartar

    • 1 cup butter

    • 2/3 cup heavy cream

    • 1 egg, beaten

    • 3 cups sliced fresh strawberries

    • 3 tablespoons white sugar




    Directions



    1. Preheat oven to 350 degrees F (175 degrees C).

    2. In a large bowl, mix flour, 1/4 cup sugar, baking powder and cream of tartar. Cut in butter with pastry blender or two knives. Stir in cream and egg. Turn out onto a lightly floured surface and knead 2 minutes. Press into a half-inch thick sheet. Cut into squares. Place on baking sheets.

    3. Bake in preheated oven 20 minutes, or until golden. Sprinkle 3 tablespoons sugar over sliced berries.

    4. Let shortcakes cool before splitting and filling with sugared berries.

    Chocolate Sandwich Cookies

    Ingredients



    • 1 (18.25 ounce) package dark chocolate cake mix

    • 1 (18.25 ounce) package low calorie chocolate cake mix

    • 4 eggs

    • 2/3 cup vegetable oil

    •  

    • 1 (8 ounce) package cream cheese, softened

    • 2 cups confectioners' sugar




    Directions



    1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease cookie sheets.

    2. In a medium bowl, stir together the dark and light chocolate cake mix. Add the eggs and oil, mix until well blended. Roll dough into 2 inch balls, and place them onto the prepared cookie sheet. Flatten the balls slightly with the back of a spoon.

    3. Bake for 10 to 12 minutes in the preheated oven, until firm. Let cool on the baking sheet for a few minutes before removing to cool on wire racks.

    4. To make the filling, beat the cream cheese and confectioner' sugar together until smooth. Spread between two cooled cookies.

    5. Use Ice Cream to fill instead of cream freeze for 1 hour serve immediately from  the freezer.

    Berry Springs Lodge Moist Apricot Muffins

    Ingredients

    1 cup chopped dried apricots
    1 cup boiling water
    1 cup sugar
    1/2 cup butter, softened
    1 cup fat free sour cream 

    2 cups all purpose flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 tablespoon orange zest
    1/2 cup chopped pecans

    Directions

    Put apricots in the boiled water to soak for 2 minutes. In mixing bowl, cream sugar and butter. Add sour cream and mix well. Combine dry ingredients then stir into creamed mixture until moistened. Pour water off apricots and fold apricots, orange zest and pecans into batter. Fill muffin tin with paper muffin cups and spoon batter into each muffin cup so that it is 3/4 full. Bake at 400 degrees for 18-20 minutes. Enjoy!

    Ingredients


  • 4 eggs, lightly beaten

  • 2 tablespoons butter 2 (8-inch) pizza crusts

  • 1 tablespoon olive oil 2 cups shredded jack cheese 

  •  fully cooked sausage crumbled 1/4 cup shredded Parmesan

  • 1 medium tomato, diced

  • 1 teaspoon Italian seasoning


  • Directions




    Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.

     

    In a medium pan over medium heat, scramble eggs in butter; set aside.

     Lay out pizza crusts and brush each with oil. Top with eggs, cheese, crumbled sausage,parmesan,tomatoes  and Italian seasoning.

    Serve hot, cut into wedges.

    Ingredients



    • 1 1/2 cups quick-cooking oats

    • 1 cup all-purpose flour

    • 2 tablespoons brown sugar

    • 2 teaspoons baking powder

    • 1/4 teaspoon salt

    • 1 1/2 cups milk

    • 2 eggs, lightly beaten

    • 2 tablespoons butter or margarine, melted

    • 1/2 cup chopped pecans




    Directions



    1. In a bowl, combine oats, flour, brown sugar, baking powder and salt. Combine milk, eggs and butter; stir into dry ingredients just until blended. Fold in pecans. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown

    • 4 slice(s) (1-inch thick) brioche

    • 3 tablespoon(s) unsalted, butter, melted

    • 1/4 teaspoon(s) salt

    • 1/8 teaspoon(s) freshly ground black pepper

    • 4 jumbo eggs



    Directions

    1. Set the broiler to low. Punch out a 2 1/2-inch hole from the center of each bread slice. Stir the melted butter, salt, and pepper together and brush the mixture on both sides of the bread slices and cutouts, including the inside of the hole.

    2. Toast the slices and cutouts of bread on a large nonstick skillet over medium-low heat until golden. Flip the bread and crack an egg into each hole.

    3. Cover and cook until egg sets -- 1 1/2 to 2 minutes. Place the skillet under broiler just until the white is fully cooked. Serve immediately.

    Spiced Cider ( Wassail)

    Get ready for Fall with a delicious hot spiced Cider... Wassail

    4 1/2 c. sugar

    2 1/4 pt. water

    24 whole cloves

    9 Cinamon sticks

    4 1/2 c. Lemonade

    4 1/2 c.orange Juice

    3 gal. apple ciderwassail3

    Mix sugar, water, cloves amd cinnamon sticks. Bring to boil and boil for 10 miutes. Remove from heat, cover and let stand for 1 hour. Romove cinnamon sticks and cloves. Add Lemonade and orange juice. mix with 3 gallon of apple cider and refrigerate. Drink it cold or hot its delicious either way!

    Blueberry French Toast Bake

    Blueberry French Toast Bake

    1/2 c. all purpose flourbaked blue berry french toast

    1 1/2 c. milk

    1tbsp sugar

    1/2 tsp vanilla

    1/4 tsp salt

    6 eggs

    10 slices french bread 1 inch thick

    cut into 1/2 inch cubes

    1-3 pkg cream cheese

    cut into 1/2 inch cubes

    1 c. fresh blue berries

    1/2 c chopped walnuts ( Optional)

    Preheat oven to 350 degrees

    Grease 13x9x2 inch baking dish

    beat flour, sugar, milk, salt, vanilla, and eggs until smooth

    stir in bread cubes until coated

    Pour mixture into dish and top evenly with cream cheese cubes, blueberries and nuts

    Cover and refrigerate for 1 hour

    uncover and bake for 20-25 minutes or until golden brown sprinkle with powdered sugar amd serve with warm maple or blueberry syrup

    9 c. all purpose flour

    1 c. sugar

    1/4 c. baking powder

    1tsp salt

    Combine together and store in an air tight container at room temperature until ready to use!

    to make 12 of the fluffiest pancakes you will ever make

    1 2/3 c. homemade pancake mix

    2 eggs

    1/4 c butter, melted

    1tsp vanilla

    1 3/4 c seltzer or club soda

    blend to gether until a smooth batter

    pour 1/4 cupful om a hot griddel and cook until bubbles form on batter side flip and 1 to 2 minutes and or until lightly golden brown top with your favorite fruit or hot maple syrup and enjoy!

    Homemade fall Granola

    Homemade fall granola is actually fantasticand hearty anytime!

    2 c. rolled oatsgranola

    1/2 c. wheat germ

    1 c. chopped almonds

    1/2 c. sunflower seeds

    1/2 c. pumpkin seeds

    1/4 sesame seeds

    1/4 tsp. salt

    1/4 c. corn oil

    1/2 c. granulated maple sugar

    1 c. raisins

    yogart and honey for serving

    Preheat oven to 325 degrees

    stir together oats, wheat germ, almonds, sunflower, pumpkin, sesame seeds and salt in a large mixing bowl. add oil and stir until the entire mixture is coated evenly. Spread mixture out in a roughly even layer on a sheet pan and bake for 20 minutes.

    Remove from oven after 20 minutes and coat with sugar and stir until all mixture is blended. let stand and cool. Once granola is cool stir in raisins and store in an air tight container. Serve over your favorite yogart or drizzle with honey.

    1 15oz can of black beansCreamy-Black-Bean-Salsa-Recipe

    1c. whole kernel corn (Canned or fresh)

    1 medium tomato, diced

    1 small red onion, diced

    1/4 c. lime juice

    1tsp. cumin powder

    red pepper flakes to taste

    1 c. salsa

    Drain and rince beans and corn. Add remaining ingredients, mix well, Serve with tortilla chips

    This is a great make-ahead dish Refrigerate overnight. Enjoy!

    Creamy Peanut Butter Pie Topped with Hot Fudge and Peanuts!

    Ingredients

  • 1/3 cup heavy cream

  • 1/4 cup light brown sugar

  • 1/4 cup light corn syrup

  • 2 tablespoons unsweetened cocoa powder

  • 1/8 teaspoon table salt

  • 2 teaspoons vanilla extract

  • 4 ounces semisweet chocolate, finely chopped

  • Peanut Butter Pie:


  • 8 ounces cream cheese, at room temperature

  • 3/4 cup confectioners' sugar, plus 2 tablespoons, divided

  • 3/4 cup creamy peanut butter, at room temperature

  • 1 cup heavy whipping cream, plus whipped cream, for garnish, optional

  • 1 teaspoon vanilla extract

  • 2 ounces shaved milk chocolate

  • Chopped peanuts, optional


  • Directions




    1 (9-inch) baked chocolate cookie pie crust

    Sauce: Add the cream, brown sugar, corn syrup, cocoa powder, salt, and vanilla extract to a heavy-bottomed saucepan over medium heat. Reduce the heat to a simmer and add the chopped chocolate. Stir continuously until the chocolate is melted and the sauce has thickened, roughly 3 to 4 minutes. Let the sauce cool for 10 minutes before serving.

    Pie: In a large bowl combine the cream cheese, 3/4 cups confectioners' sugar and the peanut butter until the mixture is light and fluffy, about 3 minutes.

    In a separate bowl, whip the heavy cream until thick and light. Add the remaining 2 tablespoons confectioners' sugar and vanilla extract. Continue to whip until stiff peaks form.

    Carefully fold the whipped cream into the peanut butter mixture. Pour the batter into the pie shell, sprinkle with the shaved milk chocolate and freeze for 4 hours.

    If desired, serve with the hot fudge sauce, whipped cream, and chopped peanuts

    Creamy Delicious Coconut Cake

    • 1 (16 ounce) package white cake mix

    • 1 (14 ounce) can cream of coconut

    • 1 (14 ounce) can sweetened condensed milk

    • 1 (16 ounce) container frozen whipped topping, thawed

    • 1 (10 ounce) package flaked coconut




    Directions



    1. Prepare cake according to package directions. Bake in a 9x13 inch pan. Cool completely.

    2. In a small bowl combine cream of coconut and condensed milk.

    3. Poke holes in cake with a straw. Pour milk mixture over cake and spread with whipped topping. Sprinkle coconut over cake.

    4. Serve chilled.
