  • 1/2 cup vegetable oil

  • 3/4 cup all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon ground black pepper

  • 4 cups milk

  • 1 lb pork sauages fried and crumbled and set aside




Directions



  1. Heat the oil in a large skillet over medium heat. Whisk in the flour, salt and pepper until smooth. Cook and stir over medium heat until browned, about 10 minutes. Gradually stir in milk so that no lumps form, and continue cooking and stirring until thickened. If the gravy becomes too thick, you may thin it with a little more milk.

  2. Add your crumbled  sausage and serve hot over your favorite homemade biscuits or country fried chicken or steak!country fried steak

Ingredients



  • 1/4 cup canola oilBerry Muffins

  • 1/2 cup milk

  • 1 egg

  • 1/2 teaspoon salt

  • 2 teaspoons baking powder

  • 1/2 cup white sugar

  • 1 3/4 cups all-purpose flour

  • 1 cup chopped strawberries




Directions



  1. Preheat oven to 375 degrees F (190 degrees C) oil an 8 cup muffin tin, or use paper liners.

  2. In a small bowl, combine oil, milk, and egg. Beat lightly. In a large bowl, mix flour, salt, baking powder and sugar. Toss in chopped strawberries and stir to coat with flour. Pour in milk mixture and stir together.

  3. Fill muffin cups. Bake at 375 degrees F (190 degrees C) for 25 minutes, or until the tops bounce back from the touch. Cool 10 minutes and remove from pans.

  4. Delicious served with softened honey butter.

Ingredients



  • 8 slices bacon

  • 4 ounces shredded Swiss cheese

  • 2 tablespoons butter, melted

  • 4 eggs, beaten

  • 1/4 cup finely chopped onion

  • 1 teaspoon salt

  • 1/2 cup all-purpose flour

  • 1 1/2 cups milk




Directions



  1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.

  2. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.

  3. Line bottom of pie plate with cheese and crumbled bacon. Combine eggs, butter, onion, salt, flour and milk; whisk together until smooth; pour into pie pan.

  4. Bake in preheated oven for 35 minutes, until set.

  5. Serve hot or cold and with toppings of your choice.

  • 1 (2 pound) package frozen hash brown potatoes, thawed

  • 1 pound pork sausage

  • 1 small onion, diced

  • 5 eggs

  • 1/2 cup milk

  • 1/2 teaspoon onion powder

  • 1/8 teaspoon garlic powder

  • salt and ground black pepper to taste

  • 12 ounces shredded Cheddar cheese




Directions



  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish. Place the hash brown potatoes in the bottom of the baking dish.

  2. Heat a skillet over medium heat and cook and stir the sausage and onion until the sausage is crumbly, evenly browned, and no longer pink; drain. Meanwhile, whisk together the eggs, milk, onion powder, garlic powder, salt, and pepper, and pour over the potatoes. Layer with half the Cheddar cheese, the sausage mixture, and the remaining Cheddar cheese. Cover with aluminum foil.

  3. Bake in the preheated oven for 1 hour. Remove cover; return casserole to the oven and bake until a knife inserted into the center comes out clean, about 10 minutes. Let stand for 5 minutes before serving.

  4. Top with sour cream, chopped green onions and tomatoes for additional flavor! Enjoy!

Valentine Sweetheart Sandwich Cookies

What better way to celebrate the Month of sweethearts than with these delicious and beautiful Cookies!

Ingredients



  • 1 cup butter

  • 1 1/2 cups confectioners' sugar

  • 1 egg

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon almond extract (optional)

  • 2 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon cream of tartar




Directions



  1. In a large bowl, cream together butter and confectioners' sugar. Beat in egg, vanilla and almond extract. Mix well.

  2. In a medium bowl, stir together flour, baking soda and cream of tartar; blend into the butter mixture. Divide dough into thirds and shape into balls.

  3. Working with 1/3 of dough at a time, roll out dough into desired thickness on a lightly floured surface. For each heart sandwich cookie, cut out 2 3-inch hearts. Cut out the center of ONE of the 3-inch hearts with the 1 1/2-inch cutter.

  4. Place each piece separately on an ungreased cookie sheet, 1 - 2 inches apart. Bake in a preheated, 350 degrees F (175 degrees C) oven until lightly browned (7-8 minutes for 1/4 inch thick cookies). Cool completely on wire rack. Frost bottom cookie with Pink Valentine Frosting and place an open centered cookie on top to form the sandwich. Also frost the small 1 1/2 inch hearts and serve as separate cookies.

Ingredients



  • 1 cup chocolate cookie crumbs

  • 3 tablespoons white sugar

  • 1/4 cup butter, melted

  • 1 (10 ounce) package frozen raspberries

  • 2 tablespoons white sugar

  • 2 teaspoons cornstarch

  • 1/2 cup water

  • 2 cups white chocolate chips

  • 1/2 cup half-and-half cream

  • 3 (8 ounce) packages cream cheese, softened

  • 1/2 cup white sugar

  • 3 eggs

  • 1 teaspoon vanilla extract




Directions



  1. In a medium bowl, mix together cookie crumbs, 3 tablespoons sugar, and melted butter. Press mixture into the bottom of a 9 inch springform pan.

  2. In a saucepan, combine raspberries, 2 tablespoons sugar, cornstarch, and water. Bring to boil, and continue boiling 5 minutes, or until sauce is thick. Strain sauce through a mesh strainer to remove seeds.

  3. Preheat oven to 325 degrees F (165 degrees C). In a metal bowl over a pan of simmering water, melt white chocolate chips with half-and-half, stirring occasionally until smooth.

  4. In a large bowl, mix together cream cheese and 1/2 cup sugar until smooth. Beat in eggs one at a time. Blend in vanilla and melted white chocolate. Pour half of batter over crust. Spoon 3 tablespoons raspberry sauce over batter. Pour remaining cheesecake batter into pan, and again spoon 3 tablespoons raspberry sauce over the top. Swirl batter with the tip of a knife to create a marbled effect.

  5. Bake for 55 to 60 minutes, or until filling is set. Cool, cover with plastic wrap, and refrigerate for 8 hours before removing from pan. Serve with remaining raspberry sauce.

  • 1 (18.25 ounce) package devil's food cake mix

  • 1 (5.9 ounce) package instant chocolate pudding mix

  • 1 cup sour cream

  • 1 cup vegetable oil

  • 4 eggs

  • 1/2 cup warm water

  • 2 cups semisweet chocolate chips




Directions



  1. Preheat oven to 350 degrees F (175 degrees C).

  2. In a large bowl, mix together the cake and pudding mixes, sour cream, oil, beaten eggs and water. Stir in the chocolate chips and pour batter into a well greased 12 cup bundt pan.

  3. Bake for 50 to 55 minutes, or until top is springy to the touch and a wooden toothpick inserted comes out clean. Cool cake thoroughly in pan at least an hour and a half before inverting onto a plate If desired, dust the cake with powdered sugar.

  4. Top with your favorite chcolate frosting or ganache

  • 16 ounces milk chocolate chips

  • 2 tablespoons shortening

  • 1 pound fresh strawberries with leaves




Directions



  1. Insert toothpicks into the tops of the strawberries.

  2. In a double boiler, melt the chocolate and shortening, stirring occasionally until smooth. Holding them by the toothpicks, dip the strawberries into the chocolate mixture.

  3. Turn the strawberries upside down and insert the toothpick into styrofoam for the chocolate

  4. Decorate any way you want

  5. Share them with your sweetie! Enjoy!

Ah yes, there are few better places to remedy a case of spring fever than in Gatlinburg, Tennessee.

Orange Poppyseed Scones

Ingredients:scones
2-1/4 c. flour
1/2 c. sugar
1/4 c. poppyseeds
1 tsp. Cream of tarter
3/4 tsp. Baking soda
1/2 tsp. Salt
1/2 c. butter
1/4 c. orange juice
1 lg. Egg
1 tsp. Grated orange peel


Mix dry ingredients in large bowl. Chop in butter until fine crumbly texture. Mix liquids together separately then add to flour mixture and form a dough, not dry but not too moist (you may need a little flour or a little orange juice if needed). Knead dough gently until smooth - only for 2-3 minutes max. Dough will get tough if over kneaded.

Roll out on floured surface to 1+" thick, cut out with round pastry cutter or slice wedge style out of a round. Top with cream (dab) and sugar. Also delicious with  orange marmalade!

Bake at 375° for 20+ minutes till lightly golden brown and firm in center.

2 lbs bulk breakfast sausage or Chorizo sausage
3 cups shredded cheese
4 cups Bisquick
6 eggs
2 cups cornmeal
3 1/2 cups milk

Preparation:

  1. Line muffin tins with paper liners, and set aside.

  2. Fry, crumble and drain the sausage.

  3. Preheat the oven to 375 degrees F.

  4. Mix together the cornmeal, Bisquick, milk and eggs.

  5. Add the shredded cheese and the drained sausage, stirring well.

  6. Ladle the filling into the prepared muffin tins, filling almost to top.

  7. Bake for about 13-17 minutes.

  8. Allow to cool completely.

  9. Store in the freezer in a large airtight container, or place each muffin in a sandwich bag, then placing a dozen in a large Ziploc bag. When ready to serve, microwave on high for about 1 1/2 minutes. Delicious!


Servings: 48 muffins or 3 loaf pans

For Dessert or Breakfast coffee cake






¼ cup margarine
¾ cup sugar
1 egg, slightly beaten
1½ cup flour
2 teaspoons baking powder
½ teaspoon salt
1 cup milk
1 teaspoon vanilla extract
Topping:
1 cup brown sugar
3 tablespoons flour
2 teaspoons cinnamon
4 tablespoons margarine
½ cup walnuts or pecans, finely chopped

Preheat oven to 350°. Spray a 9" x 9" pan with non-stick cooking spray. In a medium bown, cream margarine and sugar; beat in egg. Sift together flour, baking powder and salt in a separate bowl. Add to creamed mixture alternately with milk. Stir in vanilla. Pour blended mixture into prepared pan.

To make topping: In a small bowl, mix together sugar, flour and cinnamon. Cut in margarine with pastry blender or fork. Spoon half over batter and swirl. Spoon remaining topping over batter and sprinkle with nuts. Bake at 350° for 30 minutes. Delicious served hot or room temperature!

Ingredients



  • 1 cup margarine, softenedhawaiian bread

  • 2 cups white sugar

  • 4 eggs

  • 1 cup mashed banana

  • 1 (15 ounce) can crushed pineapple with juice

  • 4 cups all-purpose flour

  • 1 teaspoon baking soda

  • 2 teaspoons baking powder

  • 3/4 teaspoon salt

  • 1/2 cup flaked coconut

  • 1/2 cup chopped walnuts




Directions



  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

  2. In a large bowl, cream margarine and sugar together until light and fluffy. Mix in eggs, bananas and pineapple. In a separate bowl, sift together flour, baking soda, baking powder and salt. Stir flour mixture into egg mixture. Fold in coconut and walnuts. Pour batter into prepared loaf pans.

  3. Bake in preheated oven for 60 minutes, or until a toothpick inserted into center of the loaf comes out clean.

Quilting novices and experts alike come to the Smoky Mountains every year for the Pigeon Forge Quiltfest. A Mountain Quiltfest draws over 20,000 visitors to Pigeon Forge to experience classes and seminars, shop a vendor mall, and view impressive quilting works.

There are more than 60 classes and seminars scheduled for quilters to enjoy, taught by some of the nation’s top quilting experts, including: Cindy Blackberg, Debbie Caffrey, Lenore Crawford, Kaye England, Bonnie Goolsby, Klaudeen Hansen, Brenda Henning, Nancy Mahoney, Suzanne Marshall, and Annie Smith.

A Mountain Quiltfest is produced by the City of Pigeon Forge and co-hosted by the Piecemakers and Sevier Valley Quilters Guilds.

  • 1 1/2 cups all-purpose flour

  • 1/2 cup vegetable oil

  • 2 tablespoons cold milk

  • 1 1/2 teaspoons white sugar

  • 1 teaspoon salt

  • 6 Fuji apples, cored and sliced

  • 3/4 cup white sugar

  • 3 tablespoons all-purpose flour

  • 3/4 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/2 cup all-purpose flour

  • 1/2 cup white sugar

  • 1/2 cup butter




Directions



  1. Preheat oven to 350 degrees F (175 degrees C).

  2. To Make Crust: In a large bowl, mix together 1 1/2 cups flour, oil, milk, 1 1/2 teaspoons sugar and salt until evenly blended. Pat mixture into a 9 inch pie pan, spreading the dough evenly over the bottom and up sides. Crimp edges of the dough around the perimeter.

  3. To Make Filling: Mix together 3/4 cup sugar, 3 tablespoons flour, cinnamon, and nutmeg. Sprinkle over apples and toss to coat. Spread evenly in unbaked pie shell.

  4. To Make Topping: Using a pastry cutter, mix together 1/2 cup flour, 1/2 cup sugar and butter until evenly distributed and crumbly in texture. Sprinkle over apples.

  5. Put pie in the oven on a cookie sheet to catch the juices that may spill over. Bake 45 minutes.
