Overnight Blueberry French Toast

This is a wonderful recipe for Winter when you do not want to get out of that warm bed to make breakfast!


Ingredients

12 slices day-old bread, cut into 1-inch cubes  
2 (8 ounce) packages cream cheese, cut into 1 inch cubes 
1 cup fresh blueberries 
12 eggs, beaten 
2 cups milk 
1 teaspoon vanilla extract
1/3 cup maple syrup 
1 cup white sugar 
1 cup water 
1 cup fresh blueberries 
1 tablespoon butter  

Directions

Lightly grease a 9x13 inch baking dish. Arrange half the bread cubes in the dish, and top with cream cheese cubes. Sprinkle 1 cup blueberries over the cream cheese, and top with remaining bread cubes. 

In a large bowl, mix the eggs, milk, vanilla extract, and syrup. Pour over the bread cubes. Cover, and refrigerate overnight. 

Remove the bread cube mixture from the refrigerator about 30 minutes before baking. Preheat the oven to 350 degrees F (175 degrees C). 
Cover, and bake 30 minutes. Uncover, and continue baking 25 to 30 minutes, until center is firm and surface is lightly browned. 
In a medium saucepan, mix the sugar, cornstarch, and water. Bring to a boil. Stirring constantly, cook 3 to 4 minutes. Mix in the remaining 1 cup blueberries. Reduce heat, and simmer 10 minutes, until the blueberries burst. Stir in the butter, and pour over the baked French toast
This will definitely be a favorite for everyone!

Wilderness Wildlife Week was created to enjoy and educate the public on the wonders of Great Smoky Mountains National Park. It's a week of walks, talks, workshops, and hands-on experiences that explore the natural and cultural history of the Smoky Mountains.

Wilderness Wildlife Week offers activities for all ages and brings thousands of nature lovers to Pigeon Forge each year. The International Festivals & Events Association has recognized the event for its environmental and educational efforts.

2014 Tennessee Winter Special Olympics at Ober Gatlinburg

Special Olympics Tennessee Winter Games 2014

 

Over 140 athletes with intellectual disabilities compete in Alpine Skiing & Snowboarding and Speed Skating.

 

Over 140 athletes with intellectual disabilities will compete in Alpine Skiing & Snowboarding and Speed Skating in divisions based on age and ability.  The traditional lighting of the Special Olympics flame will take place on Monday morning at 9:00 on top of Ober Gatlinburg.   Award presentation will begin at 2:00 pm on Tuesday.

Remodeling our 4 King Sunrise Bathrooms at Berry Springs Lodge

We are very excited to share our remodeling photos of our 4 King Sunrise rooms, Honeysuckle Springs, Colorado Springs, Newberry Springs and Hollyberry Springs. Patrick and Scott one of the original  builders of Berry Springs Lodge are back at it again! We are gutting the bathrooms, installing a new shower, sink and custom built vanities in all 4 rooms. The bathrooms are getting all new tile and the room is getting a new closet. Here are a few photos of the remodeling in progress. We hope you can come visit us in this year and enjoy one of these beautiful rooms. Once the rooms are complete I will update the Blog with final photos.
