No Bake Chocolate Éclair Cake
 
This dessert is a delicious summer dessert
 to serve at any size gathering! Enjoy!
 
 
 
 
 
Cake

1 (1 lb) box graham cracker
2 (3) boxes French vanilla instant pudding
3 cups milk
1 (8 ounce) container frozen whipped topping, thawed

 Frosting

3 cups confectioners' sugar
1 cup cocoa
6 tablespoons butter, softened
2/3 cup milk
4 teaspoons light corn syrup
4 teaspoons pure vanilla extract


Directions:

 Line bottom of a 9x13 pan with whole graham crackers.

Using electric mixer, mix pudding with milk.
 
Beat at medium speed for 2 minutes.

Fold in whipped topping.

Pour half the pudding mixture over crackers.
 
Place another layer of whole graham crackers.

Pour remaining half of pudding mixture over top.

Cover with another layer of whole graham crackers.
 
Spread frosting on top.
 
For Frosting:
 
 Blend together sugar and cocoa.

Add butter and milk, mixing well.
 
Add corn syrup and vanilla and stir until creamy.
 
Refrigerate cake for 24 hours before serving.

Fresh Summertime Strawberry Pie

 

Choose berries that are large and of similar shape. Place berries in a pre-baked pie crust and pour a strawberry gelatin glaze evenly over the top. Chill until set and serve with a bowl of freshly whipped cream."
This pie is the perfect end to a hot summer evening! A must try!

 

Ingredients:
2 (8 inch) pie shells, baked
2 1/2 quarts fresh strawberries
1 cup white sugar
2 tablespoons cornstarch
1 cup boiling water
1 (3 ounce) package strawberry flavored
Jell-O®
Directions:
1. In a saucepan, mix together the sugar and corn starch; make sure to blend corn starch in completely. Add boiling water, and cook over medium heat until mixture thickens. Remove from heat. Add gelatin mix, and stir until smooth. Let mixture cool to room temperature.
2. Place strawberries in baked pie shells; position berries with points facing up. Pour cooled gel mixture over strawberries.
3. Refrigerate until set. Serve with whipped cream, if desired

Gatlinburg Craftsmen’s Fair Summer 2013

 

The summer Gatlinburg Craftsman Fair 2013 will take place July 19-28 downtown at the Gatlinburg Convention Center at traffic light #8. The summer version is open from 10am-6pm daily and 10am-5pm on Sundays. Admission is $6 and children 12 and under are free.
There will be country and bluegrass music shows at 12, 2, and 4pm daily and 12 and 2 on Sundays featuring Dennis Lee and Band July 19-23 and Tim Watson the “Fiddle Man” July 24-28.
You can expect to find some of the best arts, crafts, and music at the Gatlinburg Craftsmen’s Fair as it has been voted one of the Southeast’s “Most Popular Events” with 200 booths of incredible crafts!
